These brownies are rich, just the right amount of chocolatey-ness and very moist.   The perfect go to recipe for when you want just a little something sweet.

Wet Ingredientsavocado brownies

  • 4 ounces Baker’s semi-sweet chocolate
  • 1 tablespoon coconut oil
  • 1/2 cup honey
  • 1 Tablespoon vanilla
  • 3 eggs

Dry Ingredients

  • 2 avocados, pureed
  • 1 tablespoon coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder

Directions

Pre-heat oven to 350 degrees.  In a microwave safe, large bowl, place the chocolate, coconut oil, honey and vanilla.  Warm the mixture in 30 second intervals, stirring after each interval, until the chocolate just melts.  Use an electric mixer on low.  Slowly add in the eggs.  Puree avocados in a food processor. make sure there are no lumps.  We want brownies, not guacamole!  Fold the avocados into the chocolate mixture.  Beat until smooth. Sift in to the batter the remaining dry ingredients.  Grease an 8×8 pan and pour in the batter smoothing out the edges.  Bake at 350 degrees for 26 minutes.  Cool and enjoy.   Makes 8 brownies.
